Green Tea Extract Tea Polyphenols used in Food
In 1991, tea polyphenols were listed as antioxidants in food additives. Subsequently, epigallocatechin gallate (EGCG) was also listed as a new resource food, providing a regulatory basis for the application of tea polyphenols in the food industry.
In recent years, the research direction on tea polyphenols has gradually developed from extraction, separation, and preparation to terminal product research and development, resulting in a rich and colorful variety of products with added tea polyphenols.
In addition to directly adding tea polyphenols to foods such as pastries, candies, ice cream, noodles, etc., tea polyphenols can also be used as preservatives and deodorants for meat products, aquatic products, fruits and vegetables, antioxidants for processed foods such as edible oils, chocolate, cakes, etc., and color retention agents for substances such as chlorophyll, carotene, vitamins, etc.
At present, the development of tea polyphenol related foods in China is characterized by functionalization, fashion, and diversification, but the market-oriented promotion is still in its early stages.
